Join Kir Jensen for a fun filled class all about chocolate. Learn Kir’s secrets to making the best, melt in your mouth truffles, featuring beautiful single-estate Ecuadorian chocolate from our talented friend, Sebastian Cisneros of Cloudforest. 

Students will taste amazing chocolate, learn how to make chocolate truffle filling, roll and garnish your very own custom truffles. In addition, Kir will demo how to make the most decadent chocolate-cacao nib shortbread cookies, highlighting Cloudforest cacao nibs from Madagascar. We will listen to good tunes and sip on sparkling Gamay, hand selected by the lovely Dana Frank at Bar Norman. A perfect gift for Valentines Day! 

What to expect:

  • Sparkling wine during class.

  • Students will take home a heart shaped box, full of their custom truffles, chocolate-cacao nib shortbread, a gorgeous, hand package “ORCHID” chocolate tile from Cloudforest and a recipe book. 

  • After class, hop over to cozy Bar Norman and get 10% off your first glass of wine. 

Class to be offered on Wednesday, February 13th, 6:30 - 9pm.

Originally from Chicago, celebrated baker Kir Jensen has made Portland her home for the past 20 years. She is best known for her beloved dessert food cart and bake shop, The Sugar Cube.  Kir’s creations have been featured in Sunset, Food & Wine and Saveur Magazine, and she is the author of Sugar Cube: 50 Deliciously Twisted Treats from the Sweetest Little Food Cart on the Planet (Chronical Books, 2012) .
