Spring Lasagna Class, May 2023

Join Leta Merrill, chef and pasta maker extraordinaire, for an evening of lasagna making!  In this hands-on class we’ll be sheeting fresh, spinach pasta sheets, learn how to make a classic bechamel sauce, and saute in season vegetables like asparagus spring onions. Everyone will get a chance to assemble their own mini lasagna (~2 servings) to take home, plus sample some lasagna at the end of class. 

What to expect:

  • Light nibbles served at the start of class.

  • Class will include all instruction, tools, recipes and ingredients.

  • We’ll be making a dough with eggs, flour, plus vegetable purées.

  • There will be some demo, and some hands-on time.

  • Wine, beer and kombucha are available for purchase.

  • Class will end with lasagna samples, and each participant will leave with a lasagna to finish cooking at home!

About our instructor:

Leta Merrill is a chef, mother, teacher, and pastaia. She discovered her love of pasta as a child over Sunday suppers at her Sicilian great-grandmother’s home. She decided to follow her passion for food and cooking and enrolled at the Oregon Culinary Institute. Upon graduating, she took a job as pasta cook at Union Square Cafe in New York, one of the city’s most popular restaurants. There, she honed her skills, grew a thicker skin, and continued her passion for pasta. Leta now lives in Portland, and spends her time cooking, eating, traveling, teaching pasta workshops, and preparing pasta from her designer kitchen.
